  1. Remove the fascia from the beef hind leg meat and slice it along the muscle. I usually cut the meat into slices. This is the opposite of the usual cutting method. This way the finished product can be torn into long filaments.

  2. Cut the large piece of meat into long strips about 1.5 cm wide. The length is based on the length of the meat. Don't make it too short because it will be difficult to put on the grill. Also, the meat will shrink when cooked.

  3. Put the cut meat strips into a basin and soak in water to remove the blood and reduce the smell of beef. You can change the water once in the middle.

  4. Take it out, squeeze out the water, drain and sift the water, and mix in the auxiliary ingredients according to your taste. My recipe is spicy for my own taste. Curry can also be added to make curry-flavored beef jerky. After mixing, knead for about ten minutes to make the meat more flavorful.

  5. Let it sit for half an hour, preheat the oven's grill function to 160 degrees, and turn on the hot air circulation to bake for 1 hour. A baking sheet needs to be connected below. Water will flow during the baking process. Once the water is poured out in the middle, the baking sheet is no longer needed.

  6. After 1 hour, the meat is still a little soft. At this time, pour it into the baking pan and lightly apply a layer of olive oil with an oil brush. Don't make it too oily. Set the roasting function of the oven to 150 degrees, place the meat on a baking sheet and bake for 20 minutes, take it out of the oven and let it cool.

  7. I baked it at night and let it dry until the next morning. The beef jerky was very dry on the outside, but still a little soft on the inside. If you like it harder, bake it again. Or place directly on the plate to air dry.
