Overview

This vegetarian dish is inspired by the classic Cantonese home-cooked pork with pickled vegetables. Through processing, the winter melon can be made into a visual enjoyment of pork belly.   1. First let's review the material. The plum vegetables have been soaked for more than half an hour, the water has been changed twice, drained, and cut into small pieces for later use.

  2. Peel the winter melon and cut into slices about 5 mm thick.

  3. Heat a frying pan over high heat, add 2 tablespoons of vegetable oil, then put the winter melon slices into the pan and fry until fragrant.

  4. Fry side 2 until golden brown as shown in the picture and take out.

  5. Heat the wok without adding oil (the technical term is "white pan"), add the plum cabbage cubes, and stir-fry until the water evaporates, then the fragrance of the plum cabbage will be completely released.

  6. Stir-fry the pickled vegetables until they are dry, add oyster sauce, dark soy sauce, rice wine, sugar (a lot) and a little sesame oil and continue to stir-fry for a few times.

  7. Using a large bowl, place the winter melon slices upside down one by one, put the fried pickles in the middle, and clamp the outermost layer of winter melon as tightly as possible. (Whether the appearance is good or bad all depends on this step)

  8. Put the prepared winter melon into the steamer and steam over high heat for 30-40 minutes.

  9. Take out the steamed winter melon and place it on a plate with a diameter larger than the bowl. Pour the sauce for the steamed winter melon into a small pot from the side of the bowl, then remove the bowl. The so-called "button" is used to describe this step.

  10. Bring the poured sauce to a boil over medium heat, add some sesame oil and final seasoning to the sauce, then add a thin layer of gravy (scientific name: glass gravy) and pour it gently over the winter melon.
