I have done it once before, but the chicken wing roots are not very tasty, so I marinate them this time. Make two cuts on each wing root, add an appropriate amount of green onion and ginger, 1 aniseed, a little cooking wine, a little light soy sauce, then grab it, make a horse-and-sauce chicken for the chicken wings, and let it sit for a quarter of an hour. Use this moment to prepare other ingredients.

Cut the potatoes and put them in cold water for later use (it turns out that when my mother cooks in the kitchen, she will put the cut shredded potatoes in cold water. I don’t know why, but just do it anyway). The wing roots are marinated and ready to be fired ~

Boil a pot of water. When the water boils, put the chicken wing roots and the things just used for pickling in. They call this step "flying water". Once the water boils, turn off the heat, take out the wing roots, keep the water for later use, and pour out the rest (I only took out the aniseed ingredient, and will use it later)~ You can do the next step while boiling the water at the beginning of this step, it will not affect~

Put a little oil in the wok and fry the potatoes. If you do this step first, turn off the heat and wait for the wings. If the wings are ready, you can directly remove the wings.

Remove the root of the wing, add onions, ginger, garlic, the aniseed ingredients just now, then add a little cooking wine, light soy sauce, and sugar, stir-fry~

Add some water, and after the water boils, turn down the heat and cover and start simmering. Check and turn over at any time.

When the juice is almost gone, add a little salt (definitely add less, you can even leave it out if you have a weak mouth), stir-fry, take it out of the pan and put it on a plate~
