Add hot water to the flour, knead into a soft dough, cover with plastic wrap and leave for more than half an hour.

Chop green onions.

Divide the dough into two equal portions.

Take one part and roll it out thinly.

Brush with a thin layer of vegetable oil and sprinkle with salt and chopped green onion.

Roll up from one side, flatten, and cut into two strips in the middle.

Plate them separately with the cut sides facing up.

Let it sit for about ten minutes.

Pour a little oil into the pan, put in the cake dough and flatten it gently with your hands, making the middle part thinner, cover and fry over medium-low heat.

Fry until the surface turns white and becomes transparent, crack an egg into each middle of the cake, and continue to cover and fry.

Turn over halfway through.

Continue to fry until both sides are golden brown. If you like your eggs to be soft, you can reduce the frying time.
