Straw hat cake is a specialty snack in Northeast China. It is famous for its clear layers, soft texture, crispy and delicious texture, and shape like a straw hat. You can also tear it off layer by layer and eat it with your hands, so it is also called hand cake.

Prepare materials.

Blanch one-third of the flour with boiling water and knead the rest with warm water to form a dough.

After the dough has risen, add 10 grams of cooking oil into the dough. (Knead the dough while adding oil)

Roll the dough into a round shape. (Thin and thick as hand-rolled dough)

Sprinkle salt, five-spice powder, oil, and cumin powder evenly on the rolled dough sheet.

Fold the dough sheet from bottom to top into 3 finger widths.

Use a knife to cut into strips like noodles.

Pick up a handful of shredded silk and twist it with your hands.

Press lightly with your hands. Heat oil in a frying pan and add pancake dough.

Fry until both sides are golden. (When eating, use a rolling pin to push inward from the edge to loosen the cake.)
