Cut the winter melon into cubes.

Half a package of pickled mustard and dried shrimps (it took me a little longer to make the dried shrimps).

Heat the oil in the pan, add the winter melon and stir-fry.

Stir-fry for a while, add a little water, and then add the shrimp skin. Cook together until the winter melon is soft and glutinous. Ten minutes on medium heat.

After adding the mustard, cook over low heat for two minutes, and finally pour in the cornstarch. The cornstarch needs to be dispersed with cold water, about 10ml of cold water is enough. This way the soup won't be too thin.
