Prepare ingredients.

Wash the eggplant and cut it in the middle into quarters.

Marinate with salt for 5 minutes.

Drain with hands.

Coat in starch and mix evenly.

Pour oil into the pan and put the eggplants in piece by piece.

Fry the eggplant until it turns golden brown and take it out.

Take a small bowl, add one spoon of tomato sauce, one spoon of sugar, one spoon of light soy sauce, two spoons of vinegar, half a spoon of dry starch, three spoons of water, mix well, and cut the coriander into sections.

Pour the sauce into the pot, and when it bubbles, pour the eggplant in.

Stir-fry evenly and sprinkle with cooked sesame seeds and serve.
