Wash the bream and score both sides with a knife a few times. Apply salt to both sides. Cut the ginger into shreds or slices and apply it on both sides of the fish. Then stuff some of the ginger into the belly of the fish and marinate it for a while

Heat oil in a pan, add fish and add cooking wine

Brown both sides and add dark soy sauce for color

Add water to cover the fish body, add a few slices of dried tomatoes, chili peppers and a whole onion and start cooking

After cooking for a while, before the juice is almost reduced, use a spatula to push the soup onto the fish a few times to make the fish more flavorful

This will basically reduce the juice. Add chicken essence, pepper, and oyster sauce to taste. Add some chopped garlic and prepare to serve

Plate and sprinkle with chopped green onion.
