Fried eggs with caviar and avocado

I love eating avocado very much, not only because of its smooth and non-greasy taste, but also because of its extremely high nutritional value and it is a holy product for beauty and health care. I accidentally discovered this Gui Lao's creative recipe, and I have to say that my eyes lit up and I was eager to share it. Usually I only associate avocado with salad and sushi, and this mix and match amazes me. So I was very excited and decided to try it myself as soon as possible. (The recipe has been slightly improved) Because the eggs are fried with the avocado separated, it takes a certain amount of time to fry the egg whites. I have seen many ghosts say that if the egg yolks and protein are put into the avocado together, the egg yolks will be overcooked and lose their tender texture. Therefore, be sure to cook egg yolks and egg whites separately! You can put the egg yolks in two small cups respectively, and mix the egg whites in a small bowl for later use (when cooking, fry the egg whites first, then add the egg yolks), which solves the problems you may encounter in cooking.

Cut the avocado in half, remove the shell, and use a spoon to scoop out some of the flesh, leaving enough space for a whole egg.

Cut off a piece of skin from the back of the avocado so that the avocado can be heated evenly in the pan.

Crack two eggs and place them into three containers. Put the two egg yolks into small cups and set aside. Put the remaining egg whites into a small bowl. Sprinkle salt and pepper into the small bowl with egg whites and stir evenly.

Pour olive oil into a covered pan and heat over medium heat. Add the avocado cut in half, with the flesh side down, and fry for about 20 seconds until the surface of the flesh turns slightly golden.

Turn the avocado over, pour an equal amount of egg white into both halves, reduce the heat to the lowest, and cover the pot. After about 15-20 minutes, when the egg white has not completely solidified, open the lid.

Carefully pour the egg yolks over the egg whites. After 3 to 5 minutes, when the egg yolks are at their best, sprinkle with salt and pepper and remove from the pan.

Place the finished product on a plate and garnish with walnuts, thyme, balsamic vinegar and caviar to enhance the flavour. Done!
