Steps

  1. Wash the glutinous rice and soak it for 3 hours.

  2. Prepare the koji.

  3. Steamed rice.

  4. Warm the rice to about 30 degrees and then sprinkle in the rice wine.

  5. Add appropriate amount of cold water and mix well.

  6. Place in a bread machine and flatten, leaving a small hole in the middle.

  7. Cover with plastic wrap.

  8. Turn on the rice wine fermentation button and ferment for 48 hours.

  9. Fermented wine.

  10. Invert into bowl.
