Ingredients: 2 long eggplants, Longkou vermicelli, pork, ginger, onion, garlic

Peel the pork, wash and mince it

Divide the eggplant into 2 sections and cut into long strips about 1cm wide

Soak in light salt water for 15 minutes

Soak the vermicelli in water

Mash the garlic and prepare the onion and ginger

Take a small bowl, add salt, sugar, soy sauce, vinegar, oyster sauce, water and half of the chopped garlic, mix well and set aside

Heat oil in a pan, add eggplant strips

Fry over medium-low heat until golden brown

Place the fried eggplant in a bowl, with the skin part facing the bottom of the bowl

Heat the remaining oil in the pot, add a spoonful of bean paste and stir-fry until red oil appears

Add shredded ginger, green onion and minced garlic and stir-fry until fragrant

Pour in the minced meat and stir-fry until it changes color and turn off the heat

Spread the fried minced meat on the eggplant

Put fans

Pour the prepared sauce evenly
