Wash the chicken and cut into pieces

Slice ginger and garlic, cut dry chili into sections, and set aside one star anise

Heat oil in a pan, add ginger, garlic, dried star anise and chili and stir-fry until fragrant, then add chicken and stir-fry until fragrant

Add 1 tbsp oil, 2 tbsp cooking wine, 2 tbsp light soy sauce, 2 tbsp dark soy sauce and stir-fry until browned

Add water to cover the chicken, bring to a boil over high heat, then simmer over medium to low heat

When one-third of the soup is left, add an appropriate amount of salt and simmer for a while. Finally, add a small amount of sugar to make it fresh and use high heat to reduce the juice
