  1. Wash the chicken legs and set aside. No need to blanch them, just wash them a few times.

  3. In order to make the color look better, I added some gardenia powder. The amount I used was a bit too much. This powder is particularly pigmented, so just a little bit is enough.

  4. Add onion and ginger and marinate for two hours to remove the smell.

  5. I made a mistake in this step. I should have taken out the onions before putting them in the pot, otherwise the onions would release water. Put a small amount of oil in the bottom of the pot, cut the ginger into thick slices and spread it on the bottom of the pot.
