Shredded Chicken Cold Noodles

Overview

The weather is too hot. Eat a bowl of hot and sour cold noodles. It’s delicious. You can add some vegetables according to your own preferences!

I prepared the ingredients, but I didn’t take pictures of them all
Add water to the pot, add chicken breasts, an appropriate amount of pepper and cinnamon, a few slices of ginger, a few green onions, an appropriate amount of cooking wine, bring to a boil over high heat and cook for about fifteen minutes
After the chicken breast is cooked, put it in cold water and tear it into shreds along the texture of the chicken breast
Add appropriate amount of oil to the pot, add peppercorns and green onions and fry until fragrant
Add an appropriate amount of chili noodles, thirteen spices, and salt to the bowl. When the oil is hot, take out the peppercorns and green onions. Add the hot oil to the chili noodles and stir with chopsticks
Chop the garlic into a bowl, add appropriate amount of salt and boiled water, then add some oyster sauce, 2 tablespoons of light soy sauce, 1 tablespoon of vinegar, and then add the freshly mixed chili oil. If you like sesame sauce, you can also add an appropriate amount of sesame sauce, and then stir the sauce
Shred the cucumber and cut the coriander into sections and set aside
Add water to the pot and bring to a boil, put in the noodles and cook, put the noodles in cold water for a while, take them out and add an appropriate amount of sesame oil and stir
Place cucumber shreds and chicken shreds on top of the mixed noodles, then pour in the mixed sauce and sprinkle with some coriander
