Use a toothbrush to brush the whole body of the crab. For female crabs, gently open the navel and brush the inside

Chop the crab body in half, chop off the crab legs, remove the hair from the crab claws and crack them with the back of a knife.

Be careful of being clamped! Coat the chopped crabs with starch, and dip the crab roe in more starch.

Heat a little oil in a pan and fry the crabs at 80% heat until all the skin turns red and the starch solidifies. Take them out and put them on a plate.

Sauté the onions, ginger, and garlic in the pan, add the crabs and stir-fry over high heat. Add cooking wine, sugar, salt, and light soy sauce in turn. Stir-fry for three minutes, remove from the pan, and serve on a plate.
