Pour the egg yolks and 5g of fine sugar into a water-free and oil-free container and beat until slightly white.

Add the remaining sugar to the egg whites in 3 batches and beat until stiff peaks form.

Add 1/2 of the meringue to the egg yolk paste, mix slightly, then pour the egg yolk paste back into the meringue, and mix evenly.

Sift the flour into the mixed egg batter and mix with a rubber spatula until there is no dry flour. Do not over mix.

The cut and mixed batter should be thick, smooth, and light yellow. Put the mixed batter into a piping bag. Pour evenly onto a baking sheet lined with greaseproof paper, preheat the oven to 190°C for 10 minutes, and take it out immediately after baking.
