Put salt, soy sauce, and pickled plum juice into a bowl and mix well.

Wash the whole chicken.

Rub the salt evenly over the entire chicken from the inside out.

Wash and slice the galangal, or crush it if you like.

Then stuff the galangal into the chicken belly.

Cover with plastic wrap and marinate in the refrigerator for more than half a day.

Boil water in a pot and steam for about 35 minutes.
