Wash the Qingjiang fish twice and the store has packed it away when you buy it.

Heat the oil in the wok, add the peppercorns and sauté until fragrant.

Add onion and ginger slices.

Add Qingjiang fish and stir-fry for a few times. If the fish is too big, chop it up and stew it.

Pour vinegar, light soy sauce, and dark soy sauce along the edge of the pot.

Add water and cook.

Then add dried chili peppers, garlic slices, sugar, and salt and bring to a boil over high heat, then reduce to medium heat and simmer for about 15 minutes.
