Whole fish with tail and head removed;

Rinse and chop into pieces;

Add salt, pepper, cooking wine, mix well and marinate for about 10 minutes;

Add red sweet potato starch and water and mix well;

Heat the oil to 50% to 60% and deep-fry the fish bones until they are set;

Then fry again in 80% to 90% hot oil until the outer shell becomes hard and then take it out;

Over low heat, add garlic, Sichuan peppercorns and bean paste and fry until fragrant, add fish bones and stir-fry;

Pour boiling water over the fish bones;

Cook over high heat until the juice dries up and the oil spits out;

Pour vinegar and chicken essence, mix well, and serve. Sprinkle green onions on top.
