Material. I bought meat for 19 yuan

Blanch it until chopsticks can be inserted into it, then it's ready.

Take the blanched meat out, rinse it with cold water to remove any scum, and drain it. Put in the wok and stir-fry. Remember not to add oil, stir-fry until the meat turns golden brown.

Stir-fry the meat to this color. You can turn on the big fire, it was always on the low fire before. Add ginger slices and garlic and stir-fry together.

Pour in dark soy sauce, appropriate amount of water, a little pepper, and bring to a boil over high heat.

Simmer over low heat. Until the fat is softened, add rock sugar, prepare to collect the juice, and remove from the pan.
