Golden Fried Rice
Overview
Inspired by Yangzhou fried rice, my family has authentic Xiaohe shrimps brought back from Sanjiang County by friends! Paired with carrots, green peppers, and onions, it has balanced nutrition and the aroma of dried shrimps, making it a delicious meal!

Dice carrots, onions, green peppers and other side vegetables, and cut green onion into small pieces. The size of these side vegetables is equivalent to the size of rice.

Heat oil and stir-fry shrimp until fragrant

After the fried shrimps are fragrant, add other side dishes and stir-fry together, leaving a little chopped green onion for later use.

In another pan, fry the eggs and stir-fry them into pieces. Then add to the side dishes and stir-fry together. Then add appropriate amount of salt, soy sauce, and sugar.

Mash the rice in advance, put in another pan, add the rice and stir-fry, then add all the side dishes and stir-fry together. While frying, press lightly with a spatula so that the rice is evenly incorporated into the side dishes. Finally add soy sauce, sprinkle in the remaining chopped green onions and stir-fry for a while.
