Cut the potatoes into thin strips and soak them in water with salt and vinegar;

Shred onions, ginger, and peppers, mince garlic;

When the oil is hot, add Sichuan peppercorns. Wait until the Sichuan peppercorns turn dark brown, take them out, add chili peppers, shredded green onions, shredded ginger, and pour in the drained potato shreds;

Quickly pour in vinegar and stir-fry, add salt, sugar, pepper and shredded green pepper;

Add minced garlic just before serving.
