I have been hesitating whether to do it or not, and finally I did it, and the result is a pickled cucumber sauce that is rich in flavor, sweet and sour, and crispy, and is well received

Wash and dry cucumbers.

Cut into small pieces.

Stir in the salt and leave it overnight, a lot of water will come out.

Prepare garlic, ginger, chili pepper, and rock sugar.

Take a dry jar, pour light soy sauce and white vinegar into it, then add ginger, garlic, rock sugar and chili pepper to soak.

Pour away the pickling water.

Drain the brine and put the cucumbers into ginger and garlic juice and soak them for 6 hours.

Pour the pickled cucumber juice into the soup pot and drain.

Heat the poured soup and boil for 5 minutes, then let cool.

Then pour the cooled soup back into the pickled cucumbers and soak them. Repeat this process 2-3 times.

Store the pickled cucumbers in a Lock bowl. The finished product is rich in sauce, sweet and sour and crispy, making it the perfect side dish to go with a meal.
