Stir-fried kidneys

A dish that is often made, it is spicy, crispy and goes very well with rice. No odor at all.

Wash the pork loin and cut into kidney strips.

Put the kidney flowers into a bowl, add onions, ginger, a little cornstarch and more cooking wine, and marinate for 15 minutes.

Put it into boiling water and stir-fry for a short time. When the kidney flowers are rolled up, take them out immediately.

Take out the blanched kidney flowers and put them into cold water and set aside.

Cut off the leeks and separate the stems and leaves. Cut the red pepper into rings (forgot to take a photo).

Put base oil in the pot, add shredded ginger, red pepper rings and leek stalks and stir-fry until fragrant, then add kidney flowers and stir-fry over high heat. Finally, add the leek leaves, add salt, sugar and light soy sauce and serve.
