I love bacon. This is a perfect bacon bread with real meat. My wife loves it the most. Friends who have bacon must try it.

I use a bread machine to knead the dough. The ingredients are usually put in egg milk first - sugar and salt diagonally - high and low gluten flour - milk powder - yeast. After the dough is kneaded, add butter and knead quickly for about 20 minutes. After the dough has finished rising, deflate the air, divide it into 6 equal parts, wrap it in plastic wrap and let it ferment for about fifteen minutes

After the intermediate fermentation is completed, take a small portion and roll it into a rectangular shape. You can roll it out on the panel first and then place it on oil paper for shaping.

After shaping on the oil paper, place it on the baking tray, cover with plastic wrap and let it ferment for about 20 minutes. (If the weather is cold, it should be extended appropriately)

After the second fermentation is completed, take a small fork and prick a hole in the middle as big as the bacon so that there will be no hills in the middle when baking.

Then brush on the egg yolk liquid. First pour out part of the jelly-like egg whites and then break them up. This way the egg yolk liquid will be more even.

Sprinkle mozzarella cheese, and then sprinkle chopped green onion on top. When I was making it, I discovered that I didn't have chopped green onion at home, and I happened to have some small peppers, so I used it and made it. I found that the taste was very good, a bit like pizza. I still like to add chopped green onion.

Squeeze mayonnaise on it. I like to use mayonnaise when making bacon bread. It will make the bread more moist.

Put in the oven, middle rack, 180 degrees for 20 minutes. It tastes better when roasted darker. :)
