Process the fish and fillet it. Chop the fish body into pieces.

Marinate the fish fillets and add salt, cooking wine and starch. Marinate for 15 minutes.

Slice ginger.

Heat oil in a pan, add ginger slices and fish. Cooking wine, salt. Stir fry.

Boil the fish until the water covers the fish.

Cut lettuce.

Mince garlic.

Chop the dried chilies as desired.

Pour lettuce through water and remove.

Take a bowl and spread it flat on the bottom of the bowl. Pour over fish stock.

Spread the marinated fish fillets evenly on the lettuce.

Add in sequence: Sichuan peppercorns, chili powder, dried chili peppers and minced garlic.
