Fried Sausage and Potatoes
Overview
The sausages made this year (last year to be exact, because it’s already January) are a bit bland when eaten alone, so they’re especially suitable for stir-fries.

Boil a pot of hot water, put the sausage in and boil it for a while. Firstly, the heating can make it easier to remove the dust and oil on the surface. Secondly, my sausage is dry in the sun, so boiling it can also moisturize it. It doesn’t need to be cooked for a long time, and it doesn’t need to be cooked. I was worried that I wouldn't add enough bacon, but later I realized I was greedy... so I had to cut it up and pack it for later.

After cooking, wash the surface with hot water and slice into slices.

Prepare some garlic. Bacon sausage itself is more fragrant. I usually don't add ginger. I usually add ginger to raw meat.

Peel the potatoes and cut into strips. It's easier to stir-fry when cut into strips. It won't stick to each other like slices, and it will be seasoned and cooked more evenly. It depends on your personal preference. If you like to slice it, just slice it, or even shred it, as long as you like.

Boil a little water in a pot. After the water boils, put the potato strips in and cook for about a minute. The purpose of doing this step is to cook evenly when frying and shorten the stir-frying time. You can also skip this step and add it directly to the pot later.

Remove the cooked potato strips and place them on a plate. When cooking, be careful not to cook it for too long until it becomes soft. It will only change color. After all, it will still be fried later.

I also cut some lettuce roots. The roots of the lettuce that the old man pulled back were a bit long, so he felt it was a pity to throw them away.

Heat oil in pan and add garlic.

Then add the sausage and stir-fry.

After the sausage is cooked, add the potato strips. The fat part of the sausage has become transparent, and the edges are a little warped, so it's basically done.

Add some salt and sugar and stir-fry. Fry the potato strips to your liking. If you like them softer, fry them for a longer time. If you like them crispy, just stir-fry them evenly. After all, the potato strips have been boiled just now and are more than 50% cooked.

When the potatoes are fried, put down the roots of the lettuce, which is actually lettuce, and fry them.

Just flip this thing a few times and it will be more delicious if it is crispy.

You can add some oyster sauce before serving, or you can skip it. I added some because I think the seasoning of Jiuzhuang oyster sauce from Jiuji is better.
