400g of all-purpose flour, 100g of which are cooked and spread with boiling water, then add about 130g of cold water one after another.

Knead it into a smooth dough without ironing it, cover it with plastic wrap and let it rest for 30 minutes. The dough needs to be softer to ensure the texture. Blanching the noodles with boiling water also increases the softness of the cake.

While the dough is resting, make some puff pastry. Add 50 grams of flour, 1 teaspoon of pepper powder, and 8 grams of salt into the bowl.

Heat about 60-70g of oil in a pot, heat until smoking, let it sit for a while, then slowly pour it into a bowl in batches and stir evenly. (Key tip: be sure to let the hot oil dry for a while, otherwise too high an oil temperature will cause the flour to burn off).

Knead the risen dough evenly again, divide into four small portions, knead until smooth and round.

Take a small portion and roll it into a thin sheet, and spread it with the pastry you just made. (Note! The dough should not be too thick or too thin, about 2mm. If it is thick, the layers will not be clear. If it is thin, it will easily rot after being wrapped in puff pastry).

Spread the pastry dough like a fan, layer by layer until everything is folded.

Roll up the folded dough from one end, while stretching and rolling until there is a little dough left, and press the rolled dough on top. (While stretching and rolling, the inner layer of the cake will be thinner.) After everything is done, let it rest for ten minutes.

Take a small portion of the relaxed dough and roll it into a pancake.

The rolled cake will be thinner and softer. Use a rolling pin to help and roll the cake on the rolling pin.

Pour an appropriate amount of oil into the preheated electric baking pan and add the rolled out cake dough. If you want it crispy, add more oil.

Brush the surface with a little cooking oil. Close the lid and after about 1 minute, open.

Turn over.

Flip again in the middle and wait until both sides are golden brown before serving.
