Baked Rice with Bacon and Mixed Vegetables

Note: Ingredients: 1 small bowl of leftover rice, 2 slices of bacon, appropriate amount of peas, corn and mixed vegetables, appropriate amount of onions, 1 green pepper, 1 potato, appropriate amount of carrots, 1 small piece of mozzarella cheese.

Dice the potatoes and carrots and blanch them together with the peas and corn.

Cut green peppers and bacon into small pieces, cut mozzarella cheese into small cubes, and onions.

Heat a pan and add appropriate amount of salad oil.

Add bacon to hot oil and fry until bacon is oily.

Add chopped onions and saute until fragrant, add blanched vegetables and stir-fry evenly.

Add two tablespoons of tomato paste and light soy sauce and stir-fry evenly.

Add rice and stir-fry.

Stir well and the rice grains will be distinct. Add appropriate amount of black pepper and salt to taste.

Place the fried rice into a baking bowl.

Sprinkle with mozzarella cheese. Preheat the oven to 200 degrees, place it on the middle rack, and bake for fifteen minutes until the cheese melts.
