Soak the clams in clean water, add some salt, drop a few drops of sesame oil, and let it sit for a long time until all the sand is gone. Rinse under running water for 2 minutes and set aside.

Add ginger slices and cooking wine to the water and bring to a boil, pour in the clams, take them out immediately after opening and set aside.

Cut the ingredients. I cut half of the garlic into slices and crushed the other half.

Heat oil in a wok, add sliced ginger, garlic, and Sichuan peppercorns and stir-fry until fragrant, then add clams and stir-fry. Add chili sauce, light soy sauce, salt, and sugar to taste. Stir-fry evenly, then add green and red chili peppers and stir-fry for a few times. Do not take too long, as the clams will become old. Serve it out and sprinkle with chopped green onion.
