American Ginseng Cookies
Overview
Today is the winter solstice, which is said to be the shortest day of the year. As the saying goes, take nourishment in winter and kill tigers in spring. The winter solstice marks the beginning of tonic. I buy supplements for my family every year. The elderly always finish the supplements, but my husband and daughter are not so obedient and refuse to eat the American ginseng I bought for them. Strictly speaking, American ginseng is not considered a supplement, especially artificially grown young American ginseng. I asked my husband to drink it as tea, which has the effect of replenishing qi and yin. What's annoying is that my husband is used to drinking strong tea and refuses to drink ginseng tea, so I asked someone to make ginseng into powder, bought empty capsules and filled them with pills, and then let him take it for a while. Later, the poisonous capsule incident happened, and I didn’t dare to buy capsules anymore. This packet of American ginseng powder has been lying in the refrigerator for three years. If I don’t get rid of it, I’m afraid I’ll have to throw it away. Considering that my husband has the habit of eating two biscuits before going to bed, I’ll make American ginseng biscuits for him.

Weigh the ingredients.

Mix salt, sugar, American ginseng powder and baking powder evenly.

Pour the oil into the powder.

Use your hands to knead it into coarse cornmeal.

Beat in 2 eggs and use a spatula to press and mix into a ball. If the material is too dry to form a ball, add some water or milk.

After forming into a dough, wrap in plastic wrap and refrigerate for 30 minutes.

Roll out the dough into a 3MM thick sheet and use a cookie cutter to carve out the shape. Knead the leftovers into a ball and roll into a dough sheet, carving out biscuit shapes until all the ingredients are used up.

Carefully transfer to a baking sheet lined with baking cloth or paper and prick with a fork to prevent swelling. If the biscuits are too soft to move, you can freeze them first to harden before moving them, or use a scraper to scoop them up. The square deformed too much, so I later made it round.

Preheat the oven to 170°C with upper and lower heat, and set the middle rack for 15 to 20 minutes. (Different ovens have different temperatures and times. The temperature and time are for reference only.) Once the edges of the biscuits are colored, take them out and let them cool.
