Purple sweet potato meal bag
Overview
The purple sweet potato meal buns I made the day before yesterday almost went to waste because I didn't knead the glove film. Thinking that it would be cool due to the rain and using iced milk, I kneaded the dough with a bread machine without worries, and went to the side to knead the dough by hand to make steamed buns. As a result, at the end of the second program, I went to check that the dough was a little sticky to my hands, so I immediately took it out and pounded it with my hands for a few minutes. If you continue kneading, the dough will break and become sticky to your hands! When the temperature is high, be sure to pay attention to the fact that the bread machine will heat up gradually while the dough is kneading. The dough will ferment and break the tendons during the kneading process (so the liquid used in hot weather is best to be iced, knead with the lid open, and keep the mixture except butter in the refrigerator ~ This has been written in previous recipes). I would like to share my experience of making bread. Steam the purple sweet potato in advance (you can also mash it into purple sweet potato puree and sieve it)

Divide the fermented purple sweet potato dough into 6 pieces of about 80 grams each.

After making a round shape, put it directly into the baking pan (no need to rest without filling)

After secondary fermentation, sift some flour (this step can be omitted)

Preheat the oven in advance, 170℃ middle rack for 20-23 minutes (time and temperature are for reference only)

There seems to be less purple sweet potato puree and the color is not bright.
