Overview
Youtiao is an ancient Han pasta, a long and hollow fried food with a crispy and chewy texture. It is one of the traditional Chinese breakfasts. In daily life, especially in breakfast, when it comes to fried dough sticks, it can be said that it is a household name. The fried dough sticks we make at home without adding alum are safe to eat.

Prepare materials.

Pour the flour into a basin, add sugar, oil, and eggs and mix well with chopsticks. Dissolve the yeast in 170 ml of warm water. Use the yeast water to knead the flour into a dough and ferment for 2 hours.

Let the dough rise until doubled in size.

Put the baking soda and salt into a bowl, pour in 60 ml of warm water and stir to dissolve.

Dip your hands in soda water and knead into the fermented dough in batches.

Soften the dough again and let it rise again until it doubles in size.

Take out the dough that has been fermented for the second time, brush the cutting board with oil, and roll it into a rectangular piece.

Cut into 2cm wide strips with a knife.

Stack the two strips together, use chopsticks to press down on each strip, and then pinch the two ends of each two strips together.

Heat the pan and pour oil. When the oil temperature is high, stretch the prepared dough sticks into a long shape and put them into the oil pan.

Fry the fried dough sticks until golden brown and take them out.
