Braised Pork with Potatoes

Cut the pork belly and potatoes into cubes and set aside

Slice ginger, cut chilies into inch-long sections, mince green garlic, star anise, and Sichuan peppercorns

Deep-fry the potatoes until they are medium-dense (the oil is used so that 10% of the coating on the potatoes will not be simmered during the stewing process, making them taste better)

Leave a little oil in the pot and stir-fry the pork belly, ginger slices, star anise and Sichuan peppercorns.

Stir-fry the pork belly until golden brown, add a little dark soy sauce to adjust the color, add chili and stir-fry together

Add appropriate amount of water (just enough to cover the pork belly)

Bring to a boil over high heat and then simmer over medium heat

Cook until one-third of the soup remains

Add fried potatoes and simmer together, add appropriate amount of salt

When potatoes are soft, add green garlic and chicken powder and stir-fry
