  1. Cut the pork belly and potatoes into cubes and set aside

  2. Slice ginger, cut chilies into inch-long sections, mince green garlic, star anise, and Sichuan peppercorns

  3. Deep-fry the potatoes until they are medium-dense (the oil is used so that 10% of the coating on the potatoes will not be simmered during the stewing process, making them taste better)

  4. Leave a little oil in the pot and stir-fry the pork belly, ginger slices, star anise and Sichuan peppercorns.
