【Tomato and Egg Soup】
Overview
It’s been years since I’ve had authentic tomato soup. The tomatoes were brought from the countryside by my next-door neighbor. They didn’t use any fertilizer and the taste was different from those bought at the vegetable store. I like to make soup with tomatoes or eat them with scrambled eggs

tomatoes, 2 free-range eggs

Before peeling the tomatoes; make a cross with a knife

Boil the water in a small pot, put the tomatoes in the small pot and wait for 4 seconds

Place in cold water and cool quickly

Peel tomatoes

Cut into crescent-shaped pieces

Add a little salt to the eggs

Beat the eggs

When the oil in the pan is 70% hot, stir-fry the eggs in the pan, remove and set aside

Use the remaining oil in the pot to fry the tomatoes. Fry the tomatoes

Pour in the soup, scramble the eggs, and cook together with the tomatoes; add some salt halfway through and season [pepper is optional]

Pour into the soup basin and sprinkle some chopped green onion
