I like to use beef brisket or shank parts to make soup, cut into small pieces

Keep the ginger and Sichuan peppercorns aside. Add a few Sichuan peppercorns to the stewed lamb bone or beef soup. The soup will taste better

Wash an appropriate amount of fresh mint. If you like the fragrance of mint, you can add more

First use a soup pot to blanch the beef to remove the blood, then put the pot under cold water and turn on the heat

Add water to the pressure cooker and turn on the heat. Put the blanched beef into the pot. It is best to heat the water before adding it. After boiling, add the peppercorns and ginger and cover it for about 40 minutes

Turn off the heat and wait until the button of the pressure cooker comes down to open the lid

Turn the heat back to medium, add fresh mint, add salt and turn off the heat. There is no need to cook the mint after adding it or it will change color
