Prepare all the ingredients.

Crack the eggs into a bowl and stir well.

Chop some green onions.

Pour the red amaranth juice into the rice and mix well (the vegetable juice is leftover from the soup at noon, and the color is not ideal. It may be because the soup is too diluted. The method will be changed next time).

Heat oil in a pan, add egg liquid and spread it with chopsticks.
