Remove the bones from the hoof. (Ask the merchant for help when buying)

Wash and remove excess hair, place in an iron pan, skin side down and dry-scald.

Mix soy sauce, oyster sauce, sugar, chicken essence, pepper, and cooking wine into a sauce.

Apply evenly to the inside of the hoof.

Roll up tightly inward and tie with rope.

Put it in the brine soup and cook it, then soak it for a few hours to get more flavor. (Using a pressure cooker is faster)

Slice and serve on a plate when eating, and it will taste better with your favorite dipping sauce.
