Saute sesame seeds until fragrant and set aside. Wash the ribs and set aside. 2. Pour water into a pot, add cooking wine, onion and ginger to heat, then add the ribs and boil, simmer for about 10 minutes, remove and rinse with warm water and set aside. 3. Heat the pot over low heat, add a little oil (just a few drops will do) and fry the ribs. At this time, the ribs will release a little bit of oil. When the ribs are a little brown, take them out and set aside. Reserve the oil in the pot, add rock sugar and stir-fry over low heat until browned. Add the pork ribs, stir-fry, add dark soy sauce, and stir-fry until brown. 4. Add light soy sauce and vinegar, stir-fry a few times, then heat water or broth. Cook over medium heat until the juice is reduced. 5. Add salt and chicken essence, and finally drizzle a little sesame oil (can also be ignored). 6. Pour in the fried sesame seeds to coat evenly, remove from the pan and serve on a plate.
