Steps
-
Wash the chicken legs, remove the bones and cut them into small pieces. Add all the ingredients except the basil leaves and salt and pepper powder. Pour into a bowl and mix well. Put it in the refrigerator and marinate for more than 4 hours to make the chicken taste better.
-
Take out the marinated chicken and dip it in starch. The dipping action should be gentle. Place the chicken dipped in starch on a large plate and wait for about 5 minutes to allow it to "regenerate."
-
First fry at low temperature (about 140 degrees) for 2 minutes to allow the shell to form and the chicken to be cooked. Remove the chicken and drain the oil.
-
Increase the oil temperature (about 190 degrees) and fry for 2 to 3 minutes. The purpose of this is to force out the oil on the surface and make the chicken crispy without being too dry. Drain the fried chicken and put it on a plate. Place a piece of kitchen paper on the plate to absorb the excess oil.
-
Then put the basil leaves into the pot, stir-fry over low heat, and sprinkle them with the pepper and salt powder on the chicken to complete the product.
