Grilled edamame with minced meat, tomatoes
Overview
This is a simple and delicious home-cooked dish. In the Northeast, there seems to be only one way to eat edamame, which is to cook spiced edamame. I made it several times using the method I used in my hometown, and my family loved it. This is one of them.

Prepare edamame dices, minced pork and tomatoes. It’s best to buy edamame beans in pods and peel them yourself. The ones sold in some markets may have been covered overnight and have a watery smell that cannot be removed.

Add light soy sauce to the meat puree (dark soy sauce has a heavy color, which will affect the color of this dish.) Mix well with cooking wine and marinate slightly. Peel the tomatoes and cut into small pieces, then cut some ginger slices and green onions.

Heat the pot and add an appropriate amount of oil. Heat the oil to 30% heat, stir-fry the minced meat and then add the ginger and green onions and stir-fry until fragrant.

Pour in the edamame and stir-fry briefly, add water to cover the edamame, cover and simmer.

Cook until the edamame becomes soft and the soup is almost dry, add tomatoes, add appropriate amount of salt and pepper, cover and simmer for about 1 minute.

Add a little chicken essence and sesame oil and stir-fry evenly before serving.
