Prepare ingredients. 1000 grams of pork ribs, one piece of ginger, two star anise, one tablespoon of cooking wine, and 2 teaspoons of salt. Sweet and sour sauce: one spoon of dark soy sauce, two spoons of light soy sauce, 3 spoons of rock sugar, 4 spoons of balsamic vinegar, and half a bowl of water.

Blanch the ribs in cold water and take them out.

Add an appropriate amount of hot water to the pot, then add the blanched ribs, cooking wine, ginger slices, star anise, and salt. Bring to a boil over high heat, then turn to low heat and simmer for about 35 minutes.
