The beef is not smooth (as shown in the picture) and sliced

Put it into a bowl, add water and soybean flour and stir evenly, then use your hands to repeatedly pinch and pat the beef to inject more water and soybean flour into the beef. Add soybean flour and water in small amounts many times, and you will still get tender and smooth beef without using the meat tenderizer at all, but the kneading time will be longer

Add oil to the pot, first add Sichuan peppercorns and dried chili peppers, then add garlic sprouts, celery, lettuce, salt and stir-fry for 7 seconds. Remove from the pot and put a soup bowl into the bottom

Boil the dried chilies and Sichuan peppercorns in a pot, remove and let cool, then chop into fine pieces

Leave oil in the pan, add dried Sichuan peppercorns, ginger, garlic and watercress and stir-fry until fragrant

Add appropriate amount of water (soup is better)
