Red bean fermented rice
Overview
Spring is really the season when all things grow. It is said that there is a movie called "All Things Grow". You can consider watching it when you have free time. When it comes to growth, I actually don't know why my first reaction is fermentation instead of sprouting and growing leaves. I just want to drink wine and make some wine. Try it with some red beans~ This is the first time I use the function of the oven to make wine, and it is really good!

-
Soak the red beans and glutinous rice the night before

Strain out the water and steam it in a pressure cooker for about half an hour
-
This time I used old distiller’s yeast, which came in chunks
-
Break off a piece and crush it
-
Spread the steamed red beans and rice and let them cool, then add the crushed koji
-
Stir it with a clean spoon and sprinkle some on top
-
Finally stir evenly, press firmly and pour a little cold water
-
Then put it in the oven, turn on the fermentation mode, and it will ferment for a day and a half!
