Orange peel and purple potato bread
Overview
I love this bread I made on the weekend. It originally came from a few very beautiful oranges, but I always felt it would be a pity to throw away the orange peels, so I scraped off the orange peels and soaked them with white sugar, then added yogurt to knead a dough, and wrapped it in beautiful purple sweet potato puree. Finally, a beautiful and delicious bread was born. Another important point is that this bread is completely kneaded by hand, which gives a special sense of accomplishment.

Prepare the required materials. The purple sweet potato puree is ready in advance and stored in the refrigerator

Mix yogurt + eggs + sugar and salt evenly

Add candied orange peel and mix (scrape the orange peel in advance and soak it with white sugar overnight)

Add bread flour and yeast powder

Stir with chopsticks until there is no dry powder, cover it with plastic wrap and refrigerate for 1 hour

Take out the relaxed dough and knead it until it has good elasticity. Add softened butter

Continue kneading until the glove film comes out

Wrap in plastic wrap and ferment until doubled in size

Deflate the risen dough, divide it into small portions, roll into balls and rest for ten minutes

Take one portion, roll it out, and top it with purple sweet potato puree (steam the purple sweet potato, then add sugar, yogurt + lemon juice and press it into a puree)

Roll up into bread dough

Complete all the bread bases in turn and place them on the baking sheet

Let it rise for a second time until it doubles in size and then brush with egg wash
