Purple bean and egg vegetarian steamed buns
Overview
The purple beans I bought were originally intended to be stir-fried, but I changed my mind and used them to steam steamed buns. This purple bean stir-fry will turn green in color when eaten, but the color does not change when it is steamed. I don’t know why.

Wash and dice the purple beans, add salt and marinate for about 10 minutes to get out some of the water

Stir-fried eggs

Chop fungus and green onions separately

Put everything into the egg pot, add salt and mix well
