My grandson often brings something to my house. My daughter said that sometimes when he wants to eat, he also wants to buy something for grandma and deliver it to me personally, so that he can play at grandpa’s house for a while. I made egg tarts in the past two days. I made the tart crust and tart water myself. It tasted good, but I thought the tart crust was not crisp enough. The kids were a little disappointed with the hard skin. It seems that I really have a lot of knowledge in baking. I searched for an original small four-roll cake and it was said to be the easiest to make. I'm basically satisfied after finishing it. It's just wishful thinking on my part. Divide the egg whites into an oil-free and water-free basin.

Add egg yolks to sugar in another bowl and mix well, then add oil and water and mix well.

Sift the low flour and slowly mix it with a Zigzag movement until there are no lumps

Add a few drops of lemon juice or white vinegar to the egg whites, add one-third of the sugar (13 grams) and beat with a whisk until fish-eye bubbles form, then add 13 grams and continue beating until it resembles beer powder. Finally, add all the sugar and beat until the egg liquid lifted by the beaten eggs has a small curve. It doesn't have to be too hard.

Preheat the oven, pour one-third of the beaten egg whites into the egg yolk batter, and mix gently. If the egg white cannot be seen, pour the mixed batter into the egg whites. Use a spatula to fold and mix evenly. Try to be as quick as possible.

Pour the mixed batter into a baking tray lined with greaseproof paper, smooth it out and bake in the oven at 150℃ for 20 minutes
