Use boiling water to scald the noodles to the full extent. After scalding evenly, pour the dough onto the chopping board and spread it out to cool.

Knead the dough evenly and let it rest for 10 minutes, roll it into a round cake, brush it with scallion oil and butter, sprinkle with seasonings, roll it inward from both sides, bring the two sides together, roll it inward again, stack it up and down, and let it rest for 5 minutes.
