Steamed eggplant
Overview
When I was a kid, my mother often made steamed eggplants. I didn’t like eating eggplants, so I didn’t catch a cold. After I got married, my husband and I went back to my hometown and my father-in-law made this steamed eggplant dish. I tasted it and fell in love with it. It smelled very different from what we usually make, so I asked my father-in-law. My father-in-law said with a smile that he didn’t have any skills. He just prepared the garlic, boiled the oil with chopped green onion, poured a little soy sauce, boiled it and poured it on the eggplant. I came back and tried it once and it was really delicious. It is simple and delicious to make a dish of garlic eggplant on this hot summer day.

Ingredients
Steps
-
Prepare three eggplants. These are pure green ones that my father-in-law brought from his hometown. When choosing eggplants, choose purple ones. Last time I bought green ones, my mother-in-law said they were not delicious
-
Put the eggplant in the pot and steam it for ten minutes because the eggplant is relatively tender, so don’t steam it for too long
-
After the eggplant is steamed, take it out and let it cool down
-
Mash the garlic and add soy sauce, salt and vinegar because our family doesn’t eat MSG, so we didn’t add it
-
Pour an appropriate amount of oil into the pot and fry the shallots. Because Xiaopang was quite noisy today, I forgot to pour the soy sauce
-
Finally, pour the garlic and pour the scallion oil on top. It’s very simple, isn’t it?
