Steamed eggplant

Steamed eggplant

Overview

When I was a kid, my mother often made steamed eggplants. I didn’t like eating eggplants, so I didn’t catch a cold. After I got married, my husband and I went back to my hometown and my father-in-law made this steamed eggplant dish. I tasted it and fell in love with it. It smelled very different from what we usually make, so I asked my father-in-law. My father-in-law said with a smile that he didn’t have any skills. He just prepared the garlic, boiled the oil with chopped green onion, poured a little soy sauce, boiled it and poured it on the eggplant. I came back and tried it once and it was really delicious. It is simple and delicious to make a dish of garlic eggplant on this hot summer day.

  1. Prepare three eggplants. These are pure green ones that my father-in-law brought from his hometown. When choosing eggplants, choose purple ones. Last time I bought green ones, my mother-in-law said they were not delicious
