Soft grapefruit peel candy

I haven’t made grapefruit peel candy for many years. Suddenly I had a seizure and wanted to go back to my old business. Four grapefruit peels, I started to regret it before I was halfway through. This is not an easy job. Repeatedly soaking and squeezing water is not a good job. Before the squeeze is halfway done, I start to blame myself, just to get tired. However, the arrow has already been drawn out of the string, so let it complete its journey. When I put it in the pot and boiled it, no water was visible, and I started squeezing it repeatedly to squeeze out all the water in the grapefruit peel, I felt like slapping myself in the mouth. Finally, I couldn't squeeze out any more water, so I started to stir-fry slowly and dry the skin. I kept muttering in my heart that there would never be another time. While retreating, I still insisted on finishing the grapefruit peel candy. Although it was done and I felt a sense of accomplishment, I still only thought of one word, tired. . . . There won’t be a next time? . . .

Ingredients: 1000 grams of grapefruit peel, 700 grams of rock sugar, appropriate amount of water, appropriate amount of salt

Peel off the yellow skin of grapefruit

Remove the top cover

Peel off the grapefruit and use only the peel

Cut the grapefruit peel into 6X1 cm strips

Pour into a container, add appropriate amount of salt, and soak in hot water for more than 30 minutes

Squeeze out the water

Rinse with clean water and squeeze dry three times

Squeeze dry for the last time

Pour into the pot, add rock sugar and water

Put on the fire, bring to a boil, then turn to medium heat and continue to cook until no visible water is visible

While cooking, use a spoon to squeeze out the water from the grapefruit peel

The water is getting less and less, turn to low heat and continue to squeeze out the water

When you can no longer squeeze out the water, use chopsticks to spread the grapefruit peel

Stir continuously until the surface of the grapefruit peel becomes dry, turn off the heat and spread it out to cool
